Military Style Mutton curry

Military Style Mutton curry is a popular curry served across military hotels in mainy part of India. It is delicious, shift tender chunk of meat. This curry is best enjoyed with ragi muddle, donne biryani, roti, Idli or dosa. Military style mutton curry is my favorite recipe, I love to eat nonveg. You can make, not too tough strongly-flavored meat that needs to be marinated and cooked well to bring out its unique taste, just do try it there is only onion, meat, curd, coriander, green chili and all spices.
Ingrediants
For Marination:
  1. 300gms Mutton (with bone)
  2. Few Mint leaves
  3. Ginger garlic green chilli paste
  4. ½ tsp Salt ,
  5. 1 cup Curd
  6. 1 tbsp Coriander powder
  7. 1 tsp Turmeric powder
  8. 1 tsp Red chilli powder
  9. 1 tsp Cumin powder
For GreenPaste:
  1. 1 cup Coriander leaves
  2. ½ tsp Sugar
  3. 1 tbsp Oil
  4. 1-2 fresh Green chillies
For Tempering:
  1. oil as required
  2. 1 or 2 Green cardamom
  3. 3 or 4 Cloves
  4. 12-15 Black pepper corns
  5. 1 Bay leaf
  6. 2 inches Cinnamon stick
  7. 3 medium Onion, sliced
  8. Marinated Mutton
  9. garam masala
  10. coriander leaves
  11. Water as required
Method of Preparation
For Marination:
  • In a bowl add mutton, mint leaves, crushed ginger-garlic-green chillies, curd, coriander powder, turmeric powder, red chilli powder, cumin powder and mix everything properly and set aside for one and half an hour

For Green Paste:
  • In a grinder jar add coriander leaves, sugar, oil, green chillies and grind it into a smooth paste and set aside.
For Tempering:
  • In a heavy bottom kadai heat oil then add green cardamom, cloves, black pepper cons, bay leaf, cinnamon stick and let it crackle.
  • Now add sliced onions and saute until browned properly.
  • Then add the marinated mutton and continue sauteing for 5-8 minutes or until the mutton has light brown coloured.
  • add prepared green chilli paste, add garam masala, add Red chili powder.
  • Add water or stock then cover and cook for 20-25 minutes or until the mutton is 80% cooked.
  • continue cooking until the mutton is cooked completely. Serve hot and garnish with fresh coriander leaves.
