kodi guddu pulusu

kodi guddu pulusu is a tangy, spicy stew like egg curry prepared with onions and tamarind. It is a quick recipe for rice and a comfort food. Eggs are a power house of nutrients. A good source of protein and iron. It is also easy to incorporate it in all 3 meals of the day. Pulusu is a common stew like curry from Telugu cuisine, prepared in both Andhra and Telangana states. Pulupu is sour in Telugu, hence the sour curry is pulusu, prepared with tamarind juice. The base for the curry is onions.
Ingrediants
  1. Eggs 4 boiled
  2. oil as required
  3. Fenugreek seeds 1/2 tsp
  4. cumin seeds 1 tsp
  5. mustard seeds 1tsp
  6. turmeric powder pinch
  7. Onions chopped 1 cup
  8. curry leaves
  9. ginger garlic paste 1 tsp
  10. salt as required
  11. red chilli powder
  12. coriander powder
  13. tamarind juice 1 cup
  14. green chillies
  15. roasted dry coconut powder 2 tsp
Method of Preparation
  • Take a pan add required amount oil, once oil get heated add Fenugreek Seeds, cumin seeds, mustard seeds, turmeric powder and give a good mix.
  • Now add 1 cup of chopped onions, add ginger garlic paste and mix it well.
  • Add curry leaves, salt as required, red chilli powder, coriander powder and mix it well properly.
  • Now its time to add Tamarind juice, also add little water and mix it properly.
  • Now add green chillies, roasted dry Coconut powder(secret ingredient) after mixing add 4 boiled eggs.
  • cook for 5 to 10 mins & turn-off the flame. Serve this with hot hot rice.
